Spring Onion Kootu

Ingredients: Spring Onion-1 cup chopped. Channa Dahl-3/4 cup. Garlic pods-5. Cumin -1 tbsp. Salt-As req. Cumin powder-1 tbsp. Onion-1. Grated coconut-1/4 cup. Oil-For tempering. Red chilly-2. Method: In a Pan add oil, Temper cumin and chilly. Then add chopped onion and fry it then add spring onion and fry it until it shrinks. Cook channa dhal for 3 whistles. Mash it and add it to the Pan. Add salt, cumin powder, coconut to that. Then cook it for 1 min. Kootu is ready to serve. Tip: I never throw away the roots of the spring onion. Spring onion is one of the easiest growing vegetables. we can just grow with the bottom part of the spring onion after cooking. For growing spring onion we don't even need soil. Just add the roots to a container quarterly filled with water. just change the water once or twice within a week It will grow in just one week time. The process of growing vegetable in water is called Hydroponics.  

Channa Broccoli

Ingredients: 1.Broccoli-2 2.Channa- 1 cup(Boiled) 3.Pepper Pwd-1 tsp. 4.Cumin Powder--1 tsp. 5.Salt -As req. 6.oil-1 tbsp. 7.Red chilly-1. Method: 1.Cut the florets of Broccoli and Wash that. 2.In a kadai or pan add oil temper with red chilly. 3.Then add Broccoli,salt and add a small amt of water to that.    Allow it to cook for 2 mins.Broccoli gets cooked quickly. 4.Then add pepper powder and cumin powder.Stir. 5.Finally add Boiled channa stir it . 6.The recipe is ready.

Mushroom Pepper Fry

Ingredients: 1.Mushroom Cleaned,Chopped-2 cups. 2.Capsicum-1(cut lengthwise). 3.Ginger Garlic Paste- 1 tsp. 4.Onion Big-1(Cut Lengthwise) 5.Red chilly powder-1/2 tsp. 6.Garam masala-1/4 tsp. 7.Cumin pwd-1/4 tsp. 8.Whole Pepper-2 tbsp. 9.Corriander pwd-1/2 tsp. 10.Salt-As req. 11.Turmeric pwd-a pinch. 12.Oil- 2 tbsp. Method: 1.Dry roast whole black pepper in a kadai for 2 mins.Grind it to powder and set aside. 2.In a pan, add oil and add onion,salt,turmeric pwd saute well. 3.Then add ginger garlic paste,Cumin pwd,garam masala,corriander pwd,chilly pwd. 4.Then add capsicum,after it shrinks add Mushroom,Pepper and stir well. 5.Close the Pan and allow it to cook for 5 mins in medium flame,Stir occasionally . 6.Recipe is ready,When the Mushroom becomes soft.

Coconut Thuvayal/Coconut Chutney

Ingredients: 1.Grated coconut -1 cup. 2.Orid dhal-2 tsp. 3.Red chillies-4 4.Asafoetida-1/2 tbsp. 5.Oil-2 tbsp. 6.Tamarind-a small ball. 7. Salt -as req. 8.Curry leaves. Method: 1. Heat oil and add mustard, allow it to splutter, then add urad dhal, red chillies and asafoetida. 2. Saute until the dhal turns a golden colour. 3. Then add curry leaves, tamarind, salt, coconut and off the flame. Fry it for one minute with the existing heat. 4. Grind it to a coarse paste. 5. Tastes good with hot steamed rice with Ghee.
