Vegetable Biriyani 2

Ingredients:

1.Basmati Rice- 1 cup.
2.Vegetables of your Choice- (Carrot, Beans, Cabbage, Peas, Potato)-3 cups
3.Onion-3 Large
4.Tomato-2(medium-sized)
5.Garlic-8 cloves.
6.Ginger Paste -1 tsp.
7.Ghee-2 tbsp.
8.Green chilly-3
9.Salt to taste 


For Seasoning :

10.Green cardamons-2
11.Cloves -2
12.Cinnamon 1/2 inch stick 
13.Bay leaf -1 
14.Fennel seeds -1/2 tbsp 
Spice Powder:

15.Turmeric powder 1 tsp
16.Red chilli powder 1 tbsp
 17.Coriander powder 1 tbsp
18..Garam Masala-1/2 tsp
For Garnishing: 
19. Corriander leaves-chopped 1/4 cups.
20.Mint Leaves-1/4cup.
21.Water-1 cup.

Method:

1. Wash and soak basmati rice for half an hour. Drain the rice and keep it aside.
2. Cut onions thinly lengthwise. Slit green chillies.
3. Cut carrot and beans into small pieces or lengthwise (as you like).

4. In a pressure cooker or pressure pan, heat oil + ghee, add all the ingredients mentioned under seasoning.
5. Saute for a few seconds.
6. When it sizzles, add thinly sliced onions and green chilli. 
7. Saute until onions turn translucent.  
8.AddGiner paste and garlic cloves.
9. Saute until the raw flavour goes. 
10. Add chopped tomatoes. 
11. Saute the tomatoes for few seconds. 
12. Add turmeric powder, chilli powder, coriander powder, a little salt.
13. Add half of the mint and the coriander leaves. 
14. Add all the vegetables, mix well and saute for 2-3 minutes.
15. Add 1 cup of water at this stage.
16. Now close the pan for 1 -2 minutes.
17. Now add the Basmathi rice and mix well.
18. Keep the stove in medium.
19.Cook on low heat until the water evaporates (approximately it will take 20 -25 mins)
20. Finally, garnish with Corriander leaves. 

Note:
For Basmati rice little water is enough.we are soaking it for 30 mins, so 1 cup of water is enough.
