Strawberry CupCakes

Ingredients:

1.Plain/Self-raising Flour-115g.
2.Sugar-125g.
3.Butter-125g.(softened unsalted)
4.Baking Powder-1/4 tsp.
5.Baking Soda-1/4 tsp.
6.Eggs-2.
7.Milk-150 ml.
8.Strawberry jam-2 tbsp.
9.Strawberry -12 for decoration(optional)

For Icing:

1.Butter-100 g.
2.Icing Sugar-225 g.
3.Double Cream-2 tbsp.
4.Strawberry jam-2 tbsp.


Method:

1.First, start with Preheating the oven to 170 deg.
2.In a mixing bowl, mix the dry ingredients(Sifted flour, baking powder, baking soda).
3.In another bowl, add softened butter, sugar and beat it with whisk or hand mixer.
4.Then add milk and beat it.After that add eggs one by one and beat it nicely.
5.Now it's time to add the strawberry jam and beat well.
6.Mix this with flour mixture and make a lump less batter.
7.Place the batter in cupcake cases/molds, the batter should be half filled in the molds.
8.Keep it in the oven for 20 to 22 minutes in 170 deg.
9.If you insert a toothpick in the middle of the cake comes out clean, then your cupcakes are ready.Allow it to cool completely on a wired rack.



Icing:
1.In a mixing bowl add softened butter and icing sugar and beat it with a hand mixer for 5 mins.
2.Then add double cream and jam and beat for another 3 to 4 mins, so that it forms a creamy icing.
3.Jam is just for flavoring and is purely optional.
4.Your icing is ready, now place the icing in the icing bag and decorate it on the top of the Delicious strawberry cupcakes.


5.And place the strawberries on top of the icing.

Milagu (Pepper)kuzhambu/ Pathiya kuzhambu

 Ingredients: Black Pepper- 3 Tsp. Jeera seeds/cumin seeds-1 Tsp. Garlic-10-15 cloves. Vegetables like Drumstick, Beans (Avaraikaai), Brinjal-1 cup (Anyone vegetable). Salt-As req. Water -2 cups. Thinai maavu dosai/Foxtail Millet Dosa

Ingredients: Thinai maavu/Foxtail Millet -3 cups Rice Flour - 1/2 cup Onion - 1 (finely chopped) Cumin seeds - 1/4 tsp Crushed peppercorns - 1/4 tsp Green Chilly - 1 (finely chopped) Ginger - 1 " (grated) Curry leaves - 1 strand (finely chopped) Salt - as needed Oil - for making dosas Method: 1.
